Foodie Fridays - Applesauce Spice Bread

                     

I wanted to cook something quick for breakfast Thanksgiving morning and Allie loves muffins.  I had found this recipe online some time ago and thought it looked pretty good.  I usually have applesauce in the house - Allie loves it - and it's a great substitute in a lot of baking recipes.  I whipped this up and it was perfect!  Just the right amount of spice for me, easy to make, cooked up beautifully, was moist even two days later just wrapped in tin foil, and great with a cup of coffee.  Hope you enjoy!

                  

Applesauce Spice Bread

1 ½ cups Applesauce
1 cup white sugar
½ cup vegetable oil
2 eggs
3 tablespoons milk
2 cups all purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
½ cup chopped pecans (optional)

Preheat oven to 350 degrees F.

Sift all dry ingredients together in a small bowl and set aside.

In a larger bowl combine all wet ingredients, whisk together well.  Gradually add in sifted dry ingredients and mix until well combined, do not over stir.  Fold in pecans.

Pour batter into prepared baking pans and cook for 60 minutes or until a toothpick inserted comes out clean.  

Makes two standard sized loafs of bread.

I wanted to do a little something for Christmas and I thought I would do a week of recipes.  These are all recipes that I’ve posted in the past, but they are five recipes that will be great for Christmas dinners, lunches, and even gifts.  They will all be simple and inexpensive and things that anyone could cook.  So join me next week for a week of recipes that will certainly be festive enough for any table and hopefully I’m posting early enough that if you’re planning Christmas menus and needed one more thing maybe one of mine will fit right in.

  1. Well, nothing will probably ever top your apple skillet cake recipe for my family, but I will tune in, just in case. :) The applesauce cake looks delicious, so perhaps I shall need to try that one next time I am home. Only my mom and dad appreciate my culinary efforts.
