Foodie Fridays - Avocodo Chocolate Pudding
Since the latter part of December the hubby and I have been on a low carb diet. We’ve put aside pasta, white potatoes, white rice, bread, biscuits, cornbread, etc. (I am a carb junkie and it was HELL to get started.) We’ve not cut out carbs completely, I am human after all, and sometimes momma needs a piece of toast. I have not though made a pan of biscuits in over eight months, nor cornbread, or homemade bread. The only carbs from bread I’ve had have been from small tortillas, some crackers, and a few pieces of bread. After a while though you get used to it and you just make a choice that if you’re going to have a carb you just have your carbs through veggies - sweet potatoes, cauliflower, green beans. So it’s been a whole new adventure in cooking for me. Lots of salads, lots of veggies, lots of lean meats, and learning to make substitutions to our diet. So it’s not honestly a diet but a lifestyle change.
Again though, I’m human and I need something sweet from time to time. I’ve been burning up Pinterest and some great low carb websites along with some Atkins cookbooks I picked up at the thrift store. My biggest hurdle with lowcarb has been getting my head around eating good fats. Atkins is all about good fats - you can read about it online I’ll not go into it here. So in my research I stumbled upon this recipe for a chocolate pudding made with avocado. I know I made the same facial expression when I read that too. But since I’ve made cauliflower pizza, cauliflower rice, zucchini fritters, and a lot of other weird recipes since going down this path of low carb I thought why the heck not? Let’s try this thing and surprisingly it was really good! This is not a super sweet dessert and honestly has a taste reminiscent to dark chocolate - which is why I probably liked it. I’ve never really like regular chocolate pudding, which I have made from scratch before, because it is just so darn sweet. This pudding has a lovely texture and paired wonderfully with fresh Strawberries and a little whipped cream. If you make it, or already make avocado chocolate pudding, let me know!
Avocado Chocolate Pudding
2 ripe medium avocados, peeled and chopped
⅓ cup cocoa powder
¼ cup of honey or splenda (honey has a lot of carbs so if you’re on a strict low carb diet go for the splenda.)
½ cup of milk - regular or almond
1 ½ teaspoon vanilla extract
Combine all the ingredients in a food processor or blender and blend until smooth. Divide into individual ramekins and chill until set. Serve with fresh fruit and/or whipped cream.

After I discovered sin ta bo--avocado smoothie--I would believe avocado could be used in many unexpected ways!
ReplyDeleteI made it using just one avocado and was fully prepared for this to be a complete flop. I really liked it, has more of a dark chocolate taste which I prefer.
