Week of Recipes - Super Bowl Party Food
We’ve got main dishes galore, we need some sides! Sometimes that’s the best part of the mean, don’t you agree?
This is kinda cheating but who cares. The black eyed pea dip I shared on Monday is a super side and works with burgers, chicken, or honestly whatever you’re making. See the recipe HERE.
The every popular southern side, Corn Salad is one of those things that while simple is oh so good. Make it with shoepeg corn for a burst of sweetness in every bite. I normally use two teaspoons of mayo and two teaspoons of plain yogurt to lighten the dish. Sneaky tip, I also serve this as a dip too. Here's the recipe:
Corn Salad
2 11oz cans white shoe peg corn
1/2 red bell pepper diced
1/2 green bell pepper diced
1/2 red onion diced
1 cup cherry tomatoes diced
2 tablespoons mayo
2 tablespoons plain yogurt (or sour cream)
Salt and pepper to taste
Combine all ingredients and mix well. Chill before serving - best if made ahead of time and allowed to sit in refrigerator overnight.
Baked fries are so easy. Plus there’s none of the mess and bother of frying. Who needs all that cleanup when there’s football to watch!
